Chocolate Chip Muffins
Ingredients
115 gm (4 oz) (non-dairy) margarine at room temperature
70 gm (2½ oz) caster sugar
30 gm (1 oz) dark brown sugar
2 eggs at room temperature
215 gm (7½ oz) plain flour
1 tsp baking powder
125 ml (4 floz) rice milk
plain chocolate chips (non-dairy)
Method
1. Preheat oven to 190°C (375°F).
2. Sift flour and baking powder twice.
3. Cream margarine until soft. Add both sugars and beat until light and fluffy. Beat in the eggs one at a time.
4. Fold flour into butter mixture. Alternatively with the milk.
5. Spoon mixture into muffin cups and sprinkle chocolate chips on top, then cover with a spoonful of the batter.
6. Bake until lightly coloured, about 25 minutes. Let stand for 5 minutes before turning out.

Banana & Chocolate Muffins
Banana & Chocolate Muffins
Ingredients:
(makes 10 ~ 12 muffins)
275g plain flour
3 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 large bananas, about 450g
100g brown sugar (original recipe calls for 125g brown caster sugar)
1 large egg, lightly beaten
50ml semi-skimmed milk (I used rice milk)
75g unsalted butter, melted and cooled (I use Daisy margarine coz it seems to be non-dairy)
50g chocolate chips
Method:
1.Pre-heat oven to 180degC (350 degF). Line muffin pans with paper muffin cases.
2.Sieve together flour, baking powder, baking soda and salt into a mixing bowl. Mix in the chocolate chips. Set aside.
3.Peel the bananas and mash with a fork in a bowl. Add in brown sugar, egg, milk and melted butter. Mix until well combined.
4.Pour the liquid mixture into the dry ingredients. With a wooden spoon or a spatula, gently fold all the ingredients to form a wet batter. Stir gently, using only a few strokes and mix until the flour are incorporate into the batter. DO NOT Over mix. The batter should appear lumpy.
5.Spoon batter into paper muffin cases. Bake for 20mins until muffins turn golden brown or a toothpick inserted into the centre comes out clean.
6.Let cool on a wire rack. Serve warm or cold.

Preparation time: 10 min
Cooking time: 15 min
Ingredients:

1 tbsp baking powder
1 ts ground cinnamon
1/2 cup brown sugar
1 cup rice milk
125g non-dairy margarine melted
1 egg, beaten
2 apples, peeled, cored and grated
Here's how:
1. Preheat oven to 200 deg cel.
2. Sift the flour, baking powder and cinnamon into a bowl. Stir in the sugar
3. Make a well in the centre and add in the combined milk, margarine, egg and apple. Blend together, stirring no more than 15 times.
4. Spoon into muffin tins, about 2/3 full.
5. Bake for 15 minutes or until cooked and golden
6. Cool on a wire rack and store in an airtight container.
